CopyCat Bo-Berry Biscuits 🫐😋
Ingredients:
For the Biscuits:
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/4 cup granulated sugar
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk, cold
1 cup fresh or frozen blueberries (do not thaw if frozen)
For the Glaze:
1 cup powdered sugar
2-3 tbsp milk
1/2 tsp vanilla extract
Directions:
Prepare the Biscuits:
Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Gently fold in the blueberries.
Pour in the cold buttermilk and stir just until the dough comes together. Be careful not to overmix.
Turn the dough out onto a floured surface and gently pat it into a rectangle about 1-inch thick.
Fold the dough in half and pat it down again. Repeat this folding process 2-3 times to create layers.
Use a biscuit cutter or a floured glass to cut out biscuits and place them on the prepared baking sheet.
Gather any remaining dough, pat it down, and cut out more biscuits until all the dough is used.
Bake for 12-15 minutes, or until the biscuits are golden brown on top.
Prepare the Glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Adjust the consistency by adding more milk if needed.
Glaze the Biscuits:
Once the biscuits are out of the oven and slightly cooled, drizzle the glaze over the top of each biscuit.
